Autumn Minestrone

Hi. Its Janice Stompro. I made this soup last night for the family and the whole pot was licked clean. Its an easy soup to make and you will fall in love with it.

Autumn Minestrone Soup

Ingredients
1 lb. mild Italian sausage
½ lb. spicy Italian sausage
2 medium carrots, diced
1 medium yellow onion, chopped
1 Tbsp olive oil
3 cloves garlic, minced
12 cups vegetable broth
2 1/2 cups 3/4-inch diced yukon gold potatoes
2 1/2 cups 3/4-inch diced butternut squash (I bought it pre-cut)
2 medium zucchini, sliced into quarters
1 (14.5 oz) can diced tomatoes
1 1/2 tsp finely minced fresh rosemary or oregano (or 1 tsp dried)
1 1/2 tsp minced fresh thyme (or 1 tsp dried)
2 bay leaves
Salt and freshly ground black pepper
2/3 cup dry ditalini pasta
6 large leaves of swiss chard, chopped
1 (14.5 oz) can red or white kidney beans, drained and rinsed
Shredded parmesan cheese, for serving (optional)
Serve with Rosemary French bread (Whole Foods) I made mine as garlic bread in the oven

Directions:
Heat olive oil in a large pot over medium-high heat. Add sausage and onions and cook until browned. Add vegetable broth and deglaze the pan. Add in all other ingredients, except the parmesan cheese. Bring to a boil and cook for about 30 minutes. Cover, reduce heat to medium low and simmer for another 30 minutes or until soup has thickened. Remove bay leaves, serve warm with parmesan cheese.

Truffle Oil

Truffle oil is a finishing oil not a cooking oil. Truffle oil is created when truffles are soaked in olive oil. It is used to enhance foods by adding it to them after preparation.

Truffle oils are generally not used in cooking, as the heat adulterates their flavors. Either white or black truffle oil may be used in any dish, but the only difference is how you use the truffle oil.

Truffle oil is more of a flavoring or seasoning enhancer that gives a burst of flavor and should only be used lightly on your foods or dishes. The best use for truffle oil is summed up in one word, "drizzle" over foods. Experiment by adding a little truffle oil to some of your favorite dishes.

Most unrefined oils (oils obtained from cold pressing, mechanical methods) will keep for 3 to 6 months if properly stored in a cool dark location. The refrigerator is the best place to store unrefined oils.

Breast Cancer Awareness

October is Breast Cancer Awareness Month, which is an annual campaign to increase awareness of the disease. While most people are aware of breast cancer, many forget to take the steps to have a plan to detect the disease in its early stages and encourage others to do the same. We have made a lot of progress but still have a long way to go and need your help!

Keep the faith

I have a friend that was recently diagnosed with lobular breast cancer, just like mine, with 4 positive lymph nodes.  I want to remind everyone out there that my mother had 48 positive lymph nodes 18 years ago and she is doing amazing.  Keep the faith.

Croissant Overnight French Toast Souffle

Croissant Overnight French Toast Souffle
This is one of those recipes that you will keep forever!.  It is made with coarsely chopped croissants so it has a more buttery flavor than most overnight French toast recipes. It is, by far, the best I have ever made in this category.   It’s a perfect recipe for Christmas morning so that while you are busy getting ready for the day, it will be cooking in the oven. Enjoy and pass the word along about my website!  We have great recipes in our cookbooks that you won’t want to miss.
